Food has always been how I communicate.
Long before food trucks, menus, or catering forms, I was standing in professional kitchens learning discipline, timing, and respect for ingredients. I spent years working in French restaurants as a saucier — the position responsible for sauces, reductions, and the details that quietly hold an entire plate together.
Sauce teaches patience.
It teaches restraint.
It teaches you that flavor isn’t rushed — it’s built.
Pasta, though, has always been my secret love.
It’s humble, but unforgiving. Simple on the surface, deeply technical underneath. When done right, it carries everything I believe about food: comfort, generosity, and craft. When done wrong, there’s nowhere to hide.
Feelin’ Saucy Pasta Truck is where those two worlds meet.
It’s the precision and fundamentals I learned in fine dining kitchens, paired with the joy, accessibility, and energy of street food. No pretense. No shortcuts. Just real sauces, proper technique, and food meant to be shared with people who are hungry, celebrating, and living in the moment.
This truck exists because I wanted to serve food that feels both elevated and familiar. Food that respects tradition but doesn’t take itself too seriously. Food that shows care in every bite, whether it’s a festival crowd or a private event.
